Roasted whole chicken

Finally saved up the courage to undertake this big bird all in one piece!

A whole roasted chicken always looks so beautiful..on tv and when made by others. I wanted to create the same crisp skinned, moist meat, poultry. I promised myself “one day”…my willpower finally came through

Simple oven roasted whole chicken

2lb chicken (yes it’s a small one)
salt and pepper

Told you it’s a simple one!!

Try to take the chicken out of the fridge about an hour before cooking so it’s not as cold when it enters the oven.

You can truss (tie up) the chicken as it helps cook it evenly. Tuck in the wings so it can sit properly. Season with salt and pepper all around. It’s ready to go in the oven just like this! :D

Roast uncovered in the oven at 400F for 45 minutes. Use your meat thermometer every 5 minutes after to check for the recommended temperature…do not attempt eating chicken that is below this recommendation!

Beautiful and crisp golden brown skin with moist meat is what you’ll end up with! The preparation is easy, not time consuming, and the results are amazing. What more could you ask for?

But you just can’t have this on it’s own!

Here’s an idea…pear sauce

Follow the same instructions as my apple sauce, obviously changing the fruit ;) You can even go without the cinnamon.

Chicken goes with potatoes…

Mashed potatoes

Variety of potatoes (here I used white, yellow, and red)
2/3 cup milk
1/2 tbsp butter
salt and pepper
parsley leaves, finely chopped

Peel and cut the potatoes into 1 inch chunks and boil in a large pot of water until softened, about 20 minutes (but not too soft). Drain and pour into a separate bowl where you can mash them.

Turn the heat to low and put in the milk, butter, and spices. Heat until small bubbles form on the edges of the pot, then stir a few times to thoroughly combine.

Pour this into the bowl with the potatoes along with the chopped parsley. Mash in a clockwise direction TWICE. Stop. The potatoes will be mashed up enough for you to mix together while the last of the pieces break apart to make smooth mashed potatoes.

Finish off the dish with your favourite veggies!
